Chili Festival Introduces the Spicy Sambal Sauces of Bali

27 December 2015 – Bali Safari & Marine Park once again played an active role in spicing up daily life in Bali by hosting the 6th Annual Chili Festival. Held on December 26 – 27, 2015, at the Bale Banjar Area of the Bali Safari Park, the two-day event was dedicated to the proposition that “some like it hot” and was “warmly” welcomed by visitors, both domestic and foreign. Adding to the growing reputation of the festival, this year’s edition included participation by some of Indonesia’s leading professional chefs: Indonesia food Ambassador and culinary consultant William Wongso; the chairman of the of the Bali Chapter of the Indonesian Chefs Association (ICA) Komang Adi Arsana; TV-chef and cook-off judge Juna Rorimpandey, and successful Bali chef-restaurateur Mandif Warokka.
The two full days of activities included sambal-making competitions, cook-offs using chili-based recipes and live cooking demonstrations conducted by the celebrity chefs. The Chili Festival took on royal airs with the participation of 11 separate Kingdoms across Bali that were invited to present “local sambals” found in these individual regions of the Island. Rare and exotic flavors and ingredients, handed down from generation to generation, were enjoyed in events aimed to conserve Bali’s age-old culinary traditions.
William Santoso the General Manager of the Bali Safari & Marine Park said: “Bali Safari & Marine Park is a conservation and educational institution that always puts culture and nature at the forefront. Preserving Bali’s rich culture forms a part of our overall commitment to the Island. By hosting and supporting the Chili Festival, we desire to elevate the image of ‘sambal’ and its leading role in Indonesian cuisine, not only for the people of Bali but also for our many foreign visitors. We also have used this opportunity to introduce the ‘sambals’ of Bali’s Royal Kingdoms and present culinary traditions that were once limited to only to those who were members of royal households.”
Adopting the theme of “Chili-cious” the Chili Festival theme seeks to inform the public that chilies – in all the many varieties found in Indonesia – can be used to add zesty flavor to a wide range of recipes and create new taste sensations based on Bali’s unique sambal traditions. Bali, as a small but very famous part of the Indonesian Republic, must face the challenges of global tourism by sharing its culture with the World, while, at the same time, working to preserve and conserve the Island’s rich traditional culture.
